Itik (Itek) Tim is a peranakan dish of Teochew origin (I hypothesize). Basically, this dish is pork stock based robust soup with duck leg, salted-pickled mustard cabbage (kiam chye) and/or tomato, tamarind, sour plum. Although I made the initial stock with pork trotters, I have used minced duck for quick flavored soup -simply make meat balls out of it, since it takes time to braise duck leg (and a little bit fatty and too much duck fat yields crapy flavor). The kiam chye needs some soaking since it is quite salty. The richness from pork and duck together with sour note from mustard cabbage and tomato is out of this world! A soup for the soul, indeed. Give me a bowl of steamed rice!
