Ladies and Gentlemen, may I introduce the mysterious black syrupy stinky condiment that Penang Laksa and Rojak cease to exist without it, "Hae Ko!" A.k.a otak udang/petis udang in malay, prawn paste in English. I was checking the ingredients list on the back: Shrimp, sugar, flour. Wow, only 3 ingredients but it seems like ingredients vary depending on the brand, some brands add salt and or preservatives. But there seems to be such limited information on grades, types and production of hae ko -I need to find out.
