ブログの中で何度か、取り上げられているヘイコー（マレー語：オタッ・ウダン / otak udang / otak=脳ミソ udang=エビ 又はプティス・ウダン / petis udang）とはペナン島の特産品で、発酵した網エビ、砂糖、小麦粉で出来ています。ちなみにオタッ・ウダンは馬鹿な奴という意味でもあります、エビのように小さい脳だからでしょう。しかし見てください、このねばりっけ、小麦粉が入っているからでしょうか。シンガポール現地で＄１くらいで購入できます。色々調べましたが、製造過程などはよく分かりません（もう少し調べてみます）。アッサムラクサ（ペナンラクサ）やロジャックには欠かせないソースとなっています。味の表現ですが、日本に全くないものなのでなかなか難しいのですが、黒蜜の甘さを控えて、カツオの内臓の塩辛を足して、エビの出汁を混ぜたような感じです。Ladies and Gentlemen, may I introduce the mysterious black syrupy stinky condiment that Penang Laksa and Rojak cease to exist without it, "Hae Ko!" A.k.a otak udang/petis udang in malay, prawn paste in English. I was checking the ingredients list on the back: Shrimp, sugar, flour. Wow, only 3 ingredients but it seems like ingredients vary depending on the brand, some brands add salt and or preservatives. But there seems to be such limited information on grades, types and production of hae ko -I need to find out.
