ナシパダン料理は以前説明しましたが、ここワロン・ナシ・パリアマンはシンガポールで最も長い歴史を持つナシパダン界の老舗だ。１９４８年にシンガポールのカンダハーストリートにイスリン氏によってオープンされた（現在はノースブリッジロード North Bridge Rd. にある）。ワロン（Warong or Warung）はマレー語で"stall"・売店。パリアマン（Pariaman)はスマトラ島のナシパダンが発祥した場所、バダンの北にある町だ。ここのお店の名前を直訳すると、パリアマン風ご飯のお店という事になる。お店はこじんまりしているが、昼にもなると活気がすごい。写真上から：魚の素揚げ＆サンバルチリ(ikan goreng)・イカンビリス（sambal ikan bilis with peanuts 煮干とピーナッツの甘辛和）＆アチャー（acar: 漬物)・鰺（ikan selar kuning) のグリルにトッピングとしてチリ・エシャロット＆ライム＋甘醤油ソース（ikan bakar / pangang)・チキンのココナッツ煮込み。素揚げの魚はサクサク、グリルした味もこうばしくソースはご飯が進む、グリルチキンのココナッツソース(ayam bakar)は濃厚で旨い！ 余談であるが、ここでは一日５０－６０ｋｇのライスをしようするそうだ。仕込は朝の４時に始まり、１０時には準備完了するそうだ（Marsita Omar 2006 taken from infopedia)。
I recently found out through Singpore National Library's archive, Infopedia, that Warong Nasi Pariaman is the oldest running nasi padang place in Singapore (est. 1948). That is 60 years of hard work and still going strong. At the same time, I discovered that Pariaman is a city north of Padang. Anyhow, the food here was great -pics from top: deep fried fish with sambal oelek, ikan bilis with peanuts & acar, grilled ikan selar kuning with chopped veggies/sweet soy sauce dressing and grilled chicken with rich coconut sauce (ayam bakar).
